Customer Reviews: Great double boiler for small portions!June 14, 2010 Brian Campbell(San Francisco, CA USA) This little boiler is great for when you need small sizes. My use involves not using the lid, but the fact that the lid is glass helps so I can see what's going on when the pan is covered. The seal of the top pan onto the bottom pan is firm but not too tight so that some steam can escape. I bought this pan to make homemade clotted cream and it is perfect for that because the small size increases the density of the cream layer. It's exactly what I would recommend if you are interested in the art of clotted cream. The top pan does not sit upright when empty and sitting on a flat surface (the handle is too heavy) but that's the only imperfection and it's easy to get around (once you put anything in it, it stays upright). Easily washed in the dishwasher. Recommended!
